From Tajikistan to Madison
The journey to creating Silk Road began in the childhood memories of chef-owner Manu Kholov. Growing up in Tajikistan, Kholov was deeply influenced by his mother, a talented baker and chef with over three decades of experience. He fondly recalls spending his early years in her bakery, where the scent of fresh bread and the sight of pastries in the making became a part of his everyday life. “I would sleep on flour bags while my mom worked,” Kholov shares, reminiscing about the early seeds of his culinary passion.
Though he never received formal culinary training, Kholov’s love for cooking deepened during his college years in Russia and Kazakhstan. Living far from home, he found solace and connection in preparing meals for his roommates, introducing them to the flavors of Tajikistan. His experiences in these multicultural environments further broadened his culinary perspective.
Upon returning to Tajikistan, Kholov worked in various roles within the restaurant industry, honing his skills and gaining the confidence needed to eventually start his venture. His dream took a significant leap forward when he moved to Madison in 2021 with his wife, Hannah Hamelman, who began pursuing her master’s degree at the University of Wisconsin-Madison.
Madison’s Food Scene
After arriving in Madison, Kholov quickly noticed a lack of authentic Central Asian cuisine. While the city boasted diverse food options, it was missing the rich flavors and unique dishes he had grown up with. “I love lamb, and I wanted good kebabs,” he says. Frustrated by the absence of his favorite dishes, Kholov began cooking traditional foods at home and sharing them with his local Masjid community.
Word quickly spread about Kholov’s culinary skills, and soon, he was regularly preparing sambusas, kebabs, and other dishes for weekly gatherings. Friends and community members encouraged him to take the next step and open a restaurant. By mid-2023, fueled by his determination and the support of his community, Kholov secured a location, developed a menu, and launched Silk Road in August 2023.

“The food truck has been a great way to reach students and downtown workers who might not have the time to visit the restaurant,” Kholov explains. The success of Silk Road Express reflects the growing demand for halal, authentic Central Asian cuisine in Madison.
Beyond its role as a restaurant, Silk Road has become a gathering place for Madison’s Central Asian community. Kholov estimates that about 50 families from the region now reside in the city, and the restaurant serves as a cultural anchor for these families. “Madison is becoming more popular among Central Asians because of its beauty and affordability,” Kholov notes.
